1 kg (4c) cut green beans (I cook fresh ones, but canned are fine)
1 can 540 ml (19 oz) mixed beans (kidney, chickpeas, romano...etc) drained & rinsed
115g (1/2 c) finely chopped onions (white or green)
115g (1/2 c) chopped celery (good place to use the celery hearts & leaves)
115g (1/2 c) chopped peppers (red looks pretty, but use the rainbow)
115ml (1/2 c) white vinegar
115 ml (1/2 c) maple syrup
30 ml (1/4 c) Maple Balsamic Reduction
30 ml (1/4c) Maple Red Pepper Jelly
Salt & pepper to taste
Mix everything together. This salad tastes even better after a day or two, as the veggies marinate!Yippee! Another Maply Summer Salad
