In a food processor, blend 600g (3 c) of frozen mangoes cubes with the juice and zest of 2 lemons (must be fresh lemons, not reconstituted juice the easiest way to quickly zest your lemons is using a grater or rasp)
Add 125 ml (1/2 c) of pure maple syrup through the feed tube while continuing to blend the mixture.
It should be smooth, and creamy looking. Serve immediately, or freeze in an airtight container. When ready to use, allow to sit out at room temp for 10 min. Garnish with fresh raspberries, pineapple wedges or orange slices. mmmmmmmmm!
