Quick & Easy Quesidillas

you will need 8 tortillas, either 10" or 6",

shaved ham, turkey or chicken breast,

Shredded cheese (Cheddar or Mozzerella, or a mix will be great)

Sliced green onions, red peppers are optional, but add wonderful colour & texture

Hot Maple Mustard

Maple Red Pepper Jelly for dipping.

Spread Hot Maple mustard on one tortilla, evenly arrange shaved meat, all over the tortilla, sprinkle generously with shredded cheese, then top with another tortilla. Place in a non stick frying pan, set to medium heat. Grill for two minutes, flip it over, and grill for another two minutes. (this can be done in the oven or on a griddle as well)
