2 finely chopped tomatoes (Squeeze to drain off some of the juice)
114g (1/2 c) each finely chopped onion, red/green peppers,
1/2 c kernal corn (frozen or canned)
15 ml (1 tbsp) finely chopped jalapeno pepper
2g (1/2 tsp) black pepper
2g (1/2 tsp) salt
15 ml (1 tbsp) Maple Citrus Twist
15 ml (1 tbsp) Flaming Maple
114ml (1/2 c0 chopped peaches or mangoes ~optional (Rick doesn't like them)
Mix everything together, allow to sit for a bit at room temperature to mellow, then serve with chips, crackers or baguette slices...great appetizer, low in fat, high in taste. You can use it as a relish too!
