mmmmmmmMaple Pecan Bread Pudding
Bread Pudding is an old fashioned favourite! Here is my version.
1 loaf of stale egg bread (any bread or a combination of breads will do), cubed into l - 2 in chunks
6 eggs, beaten
750 ml (3 c) light cream 10% (you can use milk)
225 ml (1 c) maple syrup
125g (1/4 c) each raisins, dried cranberries, diced apple & chopped pecans
Lightly butter a 9 x 12 baking dish.
Toss bread together with fruits & nuts, arrange in baking dish
Mix together cream, maple syrup & beaten eggs, pour over the bread mixture. Bake in a 325 F oven for 45 min to an hour. Check by inserting a toothpick. If it comes out clean, the pudding is ready.
Serve by itself, or with whipped cream, or ice cream, and just a drizzle of maple syrup....mmmmmmmmmmmmmm
