Let's use our imaginations with Pork!
Pork tenderloin is relatively inexpensive, and easy to find. It doesn't require much cooking time either, but the taste is rather bland, so, let's have some fun!
900 – 1400 g (2-3 lb) of pork tenderloin
... 10 slices of bacon
Maple BBQ Sauce or
Hot Maple Mustard or
Maple Horseradish Jelly or
Maple Red Pepper Jelly
Liberally coat the meat with sauce, using a brush. Lay the bacon strips out on plastic wrap. Place the coated meat at one edge of the bacon strips, making sure the bacon is at right angles to the pork. Roll the tenderloin up in the bacon strips using the plastic wrap. Place the wrapped meat seam side down on a baking sheet, and remove plastic wrap. Bake in 375* oven until bacon is crisp, about 30 min. Let cool for 5 min, then slice the meat and serve!
Option 2
Replace the bacon strips with 4 sheets of Phylo pastry dough. Prepare the phyllo by lightly brushing the top of each sheet with melted butter or olive oil,(you can use egg whites to keep the fat down) carefully stacking the layers once again. working on plastic wrap, place meat at one edge of the phyllo, and roll it up. Brush with more melted butter or oil or egg white, and bake at 375* for 30 min.
