Chutney Chicken Packets
You will need to slice or pound your chicken breasts so you are working with a piece of meat that can be rolled. (I like to slice lengthwise a semi frozen chicken breast for this application)
On each flattened chicken breast spread a layer of baby spinach leaves. Next the fillings:
A wedge of Brie or Camenbert with a spoonful of Maple Cranberry Peach Chutney OR
15g (1 tbsp) of shredded sharp chedder with a spoonful of Maple Caramelized Onions OR
15g (1 tbsp) of shredded Asiago Cheese with a spoonful of Maple Pomegranate Fig Sauce OR
15g (1 tbsp) of cream cheese with a spoonful of Maple Berries Vinaigrette.
Cut 5 phyllo pastry sheets into 6” squares, lightly butter in between layers with a brush. Place rolled chicken medallion in the centre of each square, and pull the corners up crimping into a pouch shape.
Bake in a 350 F oven for 30 min. until crispy golden colour. Serve with salads or veggies.
