Vitamins are nutrients the body requires from external sources to stay healthy and fight disease.
Minerals are required in tiny doses, and serve to charge chemical reactions that allow the body to break down and use foods. In short , think of vitamins as tools to dismantle foods, and minerals to rev our engines! Medics will tell us, vitamin C will not store in the body, but we know that there must be complex storage systems ,perhaps using proteins in the body, to allow us to survive for up to a couple of months or more, even for water soluble vitamins like C and B's. Isn't the human body incredible?? fat-soluble vitamins like A, E and K stick around longer and absorb, as the name suggests, in fat (which is no problem for most of us!)
The bottom line is that we can skip doses of either category, if we are taking supplements , and ought to if only to save money.
